Two Tasty Healthy Dinner Recipes

  • Mozzrella 16

  • Processed Cheese 1/2 cup

  • Processed cheese grated 1/2 cup

  • Paneer (cottage cheese) grated 1/2 cup

  • Salt to taste

  • Crushed red chillies 1 teaspoon

  • Fresh coriander leaves, chopped 3 tablespoons

Procedure:

Step 1

Grate mozzarella cheese into a bowl.

Step 2

Add grated processed cheese and grated paneer and mix lightly. Add salt, crushed red chillies and coriander leaves and mix.

Step 3

Take a samosa patti. Apply water on all sides lightly. Take a portion of the stuffing and press lightly. Place it on one side of the patti and roll into the shape of a samosa. Similarly,make other samosas.

Step 4

Heat sufficient oil in a kadai and deep fry the samosas till they become light golden brown. Drain and place on an absorbent paper. Serve hot.

Chicken Chutney: This is another important item usually taken by many people all over the globe and can be consumed as a snack in the evening or can be taken as a dinner.

Ingredients:

  • 6-8 chicken portions e.g.

  • drumsticks and thighs, skin and all fat removed

  • 1 large onion, halved and sliced

  • 1 cup (250 ml) plain low-fat

  • yoghurt

  • ½ cup (125 ml) chutney

  • ½ cup (125 ml) orange

  • juice or rooibos tea

  • ½ tsp (2,5 ml) salt

  • 2 tsp (10 ml) cornflour.

Procedure:

1. Preheat oven to 180 °C.

2. Place chicken and onion in an oven dish.

3. Make a paste of yoghurt, chutney, juice, salt and corn flour and let the paste get poured over the chicken.

4. Bake the mixture for 30-45 minutes.

5. When it turns golden brown, serve it with brown rice or mashed potatoes with broccoli and carrots.
